There’s a reason vathals, vadams, and pickles have stayed part of South Indian kitchens for generations — they were never just about taste. Sun-drying vegetables was, and still is, a way to preserve a harvest without needing a refrigerator or a single artificial additive. Salt, sun, and time did the work.
That same logic holds up today. A jar of pickle or a packet of vathal made the traditional way doesn’t need preservatives to last, because the preservation method is already built in. It’s also food that travels well — into a lunchbox, a suitcase, or a parcel sent to family living far from home.
At Seshadhri Foods, we haven’t changed this process because it doesn’t need changing. The same sun-drying and slow-cooking methods that worked for our grandmothers’ generation are the ones we still rely on — not as a nostalgic touch, but because they genuinely make better, more honest food.
